Baked a dozen muffins this morning and they came out tall and fluffy, not dense like I feared from a whole-grain mix. The 16g of protein per serving is a big win for my post-run snack, and they were ready in under 30 minutes start to finish.
The whole-grain texture is surprisingly fluffy for a mix, and the banana flavor comes through without being fake. I threw it together in about ten minutes one morning and my kids demolished the muffins before lunch.
I’ve made this three times already this month and the banana flavor is spot-on without being cloying. The texture came out perfectly fluffy both as muffins and as a loaf, and it’s nice knowing the 100% whole grains make it feel a bit more substantial than your average mix.
